Dorothy St. James’s In Cold Chocolate Blog Tour with a Spotlight, Recipe and Giveaway

Bertie’s Cheer-Me-Up Chocolate Chip Pancakes

What’s the secret ingredient? Yogurt and chocolate. When you add it to the batter, it makes a fat, tasty pancake. The chocolate, well, life is simply better with chocolate.

Perfect for a Sunday morning brunch, you’ll be going back for seconds. I love it paired with fruit. But why not try something different? Top with cream cheese and maple syrup. Those two flavors would really play well with the chocolate. And don’t forget to add a little coarse sea salt or Himalayan salt to bring out the dark chocolate’s sweetness. 


One of the keys to ending up with a good dish is to start with good ingredients. You won’t enjoy the chocolate flavors if you use an inexpensive (or inferior chocolate.)


Mix together the egg and yogurt.


Combine the wet ingredients with the flour and baking soda.


Add the fair trade dark chocolate. Yum!


It’s a thick mixture. If you think it’s too thick, it can be thinned with a little milk or water. Be careful with the heat level. If the pan is too hot, the chocolate will quickly burn. It’s a delicate balancing act and one I don’t always get right.


In the end, the results are delicious.

Ingredients

6 oz Greek yogurt
1 egg
½ cup flour (gluten free flours will work with this recipe)
½ tsp baking soda
3 oz of fair trade 70% or more dark chocolate, chopped

Combine yogurt and egg in mixing bowl. In a separate bowl, combine flour and baking soda.
Combine yogurt and egg mixture with bowl with flour mixture. Stir in chopped chocolate. Yes, the batter is thick. Heat butter in nonstick pan over medium heat. Spoon batter into pan. Turn when begins to bubble. Cook until golden brown on both sides. Makes 4 large pancakes or 8 small. Serve with maple syrup, butter, and fresh fruit.

About the Author

Mystery author Dorothy St. James was raised in South Carolina. She makes her home on the outskirts of Charleston, South Carolina with her husband, a neurotic dog, and a fluffy cat. Though writing has always been a passion for her, she pursued an undergraduate degree in Wildlife Biology and a graduate degree in Public Administration and Urban Planning. She put her educational experience to use, having worked in all branches and all levels of government including local, regional, state, and federal. She even spent time during college working for a non-profit environmental watchdog organization.

Switching from government service and community planning to fiction writing wasn’t as big of a change as some might think. Her government work was all about the stories of the people and the places where they live. As an urban planner, Dorothy loved telling the stories of the people she met. And from that, her desire to tell the tales that were so alive in her heart grew until she could not ignore it any longer. In 2001, she took a leap of faith and pursued her dream of writing fiction full-time.
